There is something so magical about this time of year. People shift and stir. Dream. Declare. Pursue and reimagine. But even more magical than the resolutions and promises themselves is the time that we finally take to survey and reassess: to stop going through our daily life in automatic mode and think more clearly about our actions, intentions, and the things that matter most to us in life. As we enter the season of drastic shifts and striving to be our best selves, I have a little extra challenge for you. Is there one small thing or action that would have a much bigger impact if it happened more steadily and consistently in your life? It could be something small, like drinking more water or eating vegetables every day, or something bigger, like finally making the time for yoga.
Here’s a healthy and easy snack to get you started on the right foot. This makes a great crunchy topping to use in salads, with almond milk, or sprinkled over a yogurt or green smoothie bowl.
Cranberry Walnut Granola
- 2 cups walnuts, crushed
- 1 cup dried cranberries or cherries
- 2 tablespoons pumpkin seeds
- 2 tablespoons sunflower seeds
- 1 tablespoon hemp seeds or flax seeds
- 2 to 3 tablespoons olive or coconut oil
- 2 tablespoons maple syrup
- 3 teaspoons cinnamon
- 1 teaspoon pumpkin pie spice
- 2 teaspoons cardamom seeds (optional)
- Sprinkle of sea salt
Preheat oven to 300 degrees, and line a baking sheet with parchment paper. Combine all ingredients in a mixing bowl, and stir until all the pieces are coated well. Spread mixture out on a baking sheet, and bake for 10 to 15 minutes until golden brown. Let cool, and store in an airtight container in the fridge for up to two weeks. Makes 6–8 servings.
