Recipe: Quick Cottage Cheese Frittata

If your New Years Resolution is to eat healthier, you’re not alone, according to Google. The week before 2016 kicked off, there was a spike in searches for healthy recipes, including those with kale, collard greens, and broccoli.

Searching for a few recipes may have been working up until Jan. 8, but there’s another 357 days to go in 2016 and some new healthy recipes might need to be added to your low-cal repertoire. Our friends at Darigold advise adding cottage cheese to your grocery list; it’s gluten-free and packed with protein, potassium, calcium, and vitamins A and D.

Darigold has a quick and easy Cottage Cheese Frittata recipe to help with a healthy and delicious 2016.

Quick Cottage Cheese Frittata

8 Eggs

1 Tablespoon Coarse-Grain Mustard

1 Teaspoon Crushed, Dried Italian Seasoning

¾ Cup Darigold Cottage Cheese

2 Tablespoons Chopped Chives or Green Onions

2 Tablespoons Darigold Butter

½ to 1 Cup Chopped Veggies (cooked asparagus, peas, tomatoes)

½ Chopped Meat of Choice (ham, chicken, turkey, etc.)

Optional: Darigold Sour Cream

Instructions: Set oven to broil. Beat eggs, mustard and Italian seasoning in a mixing bowl; stir in cottage cheese and chives. Set aside. Melt butter in skillet with an oven-safe handle over medium-high heat. Add veggies and meat (optional) and sauté 2 to 3 minutes; add egg mixture and cook over medium heat until sides are set and edges are light brown. Place pan under the broil for 5 to 7 minutes, or until center is golden and set. Garnish with a dollop of sour cream. Makes 4-5 servings.
