Sweet potatoes are a bright and beautifully colored root vegetable that a lot of people don’t eat enough of. Sweet potatoes are an excellent source of vitamin A (in the form of beta-carotene), vitamin C, and potassium. They also are an excellent source of many other vitamins and minerals, contain antioxidants, and are a good source of fiber.
Sweet potatoes come in many colors, and several studies have shown purple sweet potatoes have more than three times the antioxidant power of blueberries!
There are many different ways to cook sweet potatoes, but these simply sweet potato fries hit the spot.
Sweet Potato Fries
Prep time 45 minutes
Spray coconut oil
2 large organic sweet potatoes
Pinch of sea salt
Pinch of cumin
Pinch of paprika
Preheat oven to 425 degrees. On a large baking sheet, spray with coconut oil. Wash and cut sweet potatoes into small wedges, and place on pan. Spray wedges with coconut oil and sprinkle with sea salt, cumin, and paprika. Bake for 15 minutes, turning fries over. Bake for 12 more minutes and enjoy.
