Culinary Experts Share Insights Into Jewish Tradition

Acclaimed scholars, chefs, and cookbook authors offer foodies insights into the Ashkenazi Jewish kitchen in a free online course, A Seat at the Table: A Journey into Jewish Food. This diverse selection of videos introduces viewers to a fascinating range of culinary subjects with 100 hours of in-depth interviews and cooking demos produced by the YIVO Institute for Jewish Research’s Shine Online program.

Lighter fare includes entertain-ing demonstrations by experts like Josh Russ Tupper (of New York City’s venerated Russ & Daughters Café), who explains the secret to slicing smoked salmon like a pro (hint: It’s all in the wrist), or essayist Ilan Stavans, who bucks tradition by drizzling Mexican mole sauce over latkes rather than the usual sour cream/applesauce combo. More weighty discussions are included, too, such as a roundtable of experts who explore the food culture brought by Jewish immigrants in “Ashkenazi Jewish Food and the Immigrant Experience.”

Until Dec. 31, the course is available free online and, once registered, you can watch any of the lessons indefinitely and download the recipes.
