Celebrating Halibut at The Lakehouse

Award-winning chef Jason Wilson celebrates springtime in The Lakehouse kitchen at The W Hotel in Bellevue with one of his favorite proteins — halibut.

Weeks and even months prior to the arrival of fresh halibut, chef Jason Wilson of The Lakehouse in Bellevue is giddy about preparing it for guests.

“In about the third week in March, halibut season opens in Alaska and locally in Neah Bay,” Wilson said. “They’re big and fresh — and my first inclination is to feature it with a pea salad, which I love to do. This beautiful fish has just been harvested wild and then you have beautiful, grassy flavors with fresh peas, lemon zest, chile, and mint that go so well with that rich, poached fish. It’s so easy and delicious.”

Wilson said The Lakehouse, sporting “farmhouse chic” décor and serving an array of seasonal culinary creations, is literally a dream come true for him. “It’s simple enough to be accessible for everyone, and yet the restaurant has enough character and personality to make people feel really special when they come in. We have very interesting design elements throughout the place that are both rustic and refined — everything is in balance.”
