Time travel may not be possible, but visit the Edgewater’s Six Seven Restaurant & Lounge by April 15 and find yourself instantly transported to the year 1962.
You won’t find any early ’60s fashion, not to mention, large cargo ships slipping through Six Seven’s serene, unobstructed view don’t exactly hearken back to an earlier era, but the classic dishes on each plate are certainly reminiscent of the year The Edgewater opened.
In celebration of The Edgewater’s 55th Anniversary, the downtown Seattle-based restaurant has curated a special line up of dishes that appeared on its menu all those years ago.
Start with a Waldorf salad filled with apples, celery, walnuts, smoky blue cheese, cider, and local honey vinaigrette. Then, move on to the grilled filet of beef “Diane” served with chive whipped potatoes, roasted spring vegetables, and caramelized shallots with a dijon-cognac pan sauce. Wrap up the evening with a sinfully delicious pineapple upside-down cake or strawberry shortcake made with lemon pound cake, sugared strawberries, and vanilla whipped cream.
